Brown your chicken pieces and place in crock pot. Mix 1 pkg onion soup mix, 1 jar French dressing and 1 jar Apricot preserves in small pan just to melt and mix. Pour over chicken. Cook on HIGH for 1 hour then turn to LOW and cook for 3 hours. Serve with rice. I think the Dr. Pepper idea is genius.<br /><br />I made a chicken tortilla soup yesterday.<br /><br />Chicken Tortilla Soup off the top of my head:<br />4 boneless, skinless chicken breast cut into bite sized pieces<br />1 can fire roasted tomatoes<br />8 cups chicken stock<br />1 cup baby carrots<br />1 onion chopped<br />1 tbls. onion powder<br />1 tbls. garlic powder<br />1 tbls. ground cumin<br />1 tbls. black pepper (opt)<br />2 cups tortilla chips or fritos crushed<br />Put everything in the crockpot on low and cook 4 hours. Add corn chips or tortilla chips. Continue cooking for another 4 hours. Serve piping hot with guacamole and sour cream.<br /><br />Let me know if you try it. Love that What's Cooking card too!<br />Here's my tried and true Pot Roast recipe, and it couldn't be any easier:<br />Place your choice of pot roast in crockpot, cover with one halved and thinly sliced onion and 1/4 cup of soy sauce. Add salt and pepper and 1 tsp rosemary (fresh or dried is fine). Cook on low for at least 6 hours. I like to remove the roast, then skim the fat and thicken the broth with some corn starch mixed with water. Yesterday we made 'Fiesta Chicken':<br /><br />4-6 chicken breasts (can put in frozen)<br />15oz can diced tomatoes & juices<br />15oz can black beans (drained)<br />small can or 1c. cup frozen corn kernels (drained)<br />8 - 10oz jar of whatever salsa you love<br /><br />Cook on low for 6-7 hours or until chicken is falling apart. Remove chicken from cooker and cube or shred as desired. Return shredded chicken to pot and add 1 8oz block of cream cheese.
